The Daibō Coffee Shop was one of the best known places to enjoy a superior hand poured cup of coffee in Tokyo, Japan. Although the shop itself doesn't exist anymore, its legacy is still very much alive. Tokyo based brand Azmaya works together with Japanese coffee master Katsuji Daibō to create a line of his signature brewing tools.
Katsuji Daibō refined his stainless-steel coffee pots with a hammered spout, creating a precise, narrow flow of water. This subtle modification allowed for perfect control of the slow drip essential to his meticulous nel drip brewing method.
