Otoshibuta drop lid made of tōhi spruce 18

A drop lid sits on top of the ingredients rather than on top of the saucepan. It makes for an even distribution of liquid and heat. Because it’s slightly smaller size, moisture can still slowly evaporate to thicken a sauce, while the ingredients steam under the otoshibuta. It’s a durable alternative to the cartouche used in Western cooking.
